Kickin’ It Black Bean Soup
Ingredients:
1 T olive oil
1 package of small ham chunks
2 cups finely chopped or shredded carrots
˝ jar of sweet banana peppers
16 oz beef broth
2 15 oz cans of black beans
1 15oz can of tomato puree
Instructions:
In a large soup pot, sauté
carrots and banana peppers with olive oil for 2-3 minutes.
Add beef broth, tomato puree, black beans (drained), and ham
chunks. Bring to a boil. Simmer on medium heat for 10 min.
Add salt and pepper to taste. Makes 4 servings.
To kick it up add a jar of “medium” Rotelle or diced
green chilies!
