Grilled Salmon Oriental (serves 6)

Ingredients:
1 ½ lbs. salmon steaks or filets
Marinade: 6 ounces pineapple juice
½ cup finely chopped onion
½ teaspoon grated lime zest
2 tablespoons fresh lime juice
1 tablespoon grated fresh gingerroot
1 tablespoon light soy sauce
2 medium cloves garlic, minced
1 teaspoon hot-pepper oil (optional)
1 teaspoon olive oil
vegetable oil spray.

Instructions:
Rinse fish, dry with a paper towel, and place in a plastic bag. Combine marinade ingredients and pour over fish. Seal bag and place in refrigerator for 15 minutes to 1 hour. Spray grill or broiler with vegetable spray, preheat to medium-high. Grill fish for 5-7 minutes per side or until it flakes easily with a fork.
