| Lemon Baked Chicken
The tangy taste helps make this
anything but your everyday chicken.
Ingredients:
vegetable oil spray
2 tablespoons fresh lemon juice
2 tablespoons acceptable vegetable oil or acceptable margarine,
melted
1 clove garlic, crushed
1/2 teaspoon freshly ground black pepper
1 - 2 1/2 to 3 lb. frying chicken, cut into serving pieces,
skinned, with all visible fat removed
Instructions:
Preheat oven to 350 F. Lightly
spray a baking pan or a shallow casserole dish with vegetable
oil. In a small bowl, combine lemon juice, oil, garlic and
pepper. Set aside. Rinse chicken and pat dry. Arrange chicken
in prepared pan or dish. Pour lemon mixture over chicken
pieces. Cover and bake about 40 minutes, or until tender,
basting occasionally. Uncover casserole and bake 10 minutes
longer to allow chicken to brown. Makes 4 servings. |
