| Chicken Rice Medley
Ingredients:
1 teaspoon garlic powder
1/2 teaspoon lemon pepper
1/2 teaspoon basil
4 chicken breasts, halved, boned, skinned
1 tablespoon margarine
1-1/2 cups water
1/2 cup mushrooms, sliced
1 teaspoon lemon juice
1 teaspoon grated lemon peel
1/2 cup uncooked rice
1 cup broccoli florets
Instructions:
Combine garlic powder, lemon
and basil and sprinkle over chicken. Sauté in margarine over
medium heat just until browned (about 2 minutes per side).
Remove from skillet. Add water, mushrooms, lemon juice and
peel and rice. Bring to a boil. Return chicken to skillet.
Cover tightly and simmer for 15 minutes. (Add more water if
rice is beginning to stick.) Add broccoli and cook 5 minutes
more or until all liquid is absorbed. Makes four servings. |
