South of the Border Fiesta
Soup
Ingredients:
1 13oz can of chicken chunks
1 pkg taco seasoning mix
2 cups of frozen corn (or fiesta corn)
1 bag of frozen pepper blend
4 cups skim milk
Instructions:
In a large soup pan sauté chicken and pepper blend with taco
mix. Simmer on low-medium heat, add skim milk and corn.
Makes 4 servings.
To kick it up try a teaspoon of crushed red pepper, black
pepper or cayenne pepper.
