Spinache Pie in a Veggie Nest

Veggie Nest:
1 medium zucchini
1 medium carrot
5-7 button mushrooms
1 small onion
1 medium potato
1 small sweet potato

Spray a 9 inch pie plate with non-stick spray. Grate the above with a grater or salad shooter. Stir to combine. Press onto the bottom and up the sides of the pie plate. Bake at 425 degrees for 20-25 minutes. Reduce heat to 350 degrees.

1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
1/3 cup chopped onion
1 cup shredded reduced fat Swiss cheese
1/4 cup skim milk
2 eggs, lightly beaten
2 egg whites, lightly beaten
1/2 - 1 teaspoon dried oregano
1/4 teaspoon ground nutmeg

In a bowl, combine the above and pour into the veggie nest. Bake at 350 degrees for 25-30 minutes or until top begins to brown and knife inserted in the middle comes out clean. Let stand for 10 minutes before cutting. Yield: 6 servings.
