Texican Bean and Tofu Salad
1 cup frozen whole kernel corn,
thawed
1 can (15 oz) black beans, drained and rinsed
1 can (4 oz) chopped mild green chiles
2 tomatoes, cubed
2 tablespoon chopped fresh cilantro
1 cup firm tofu, cubed
Combine the above six ingredients and prepare to make the
dressing:
1 tablespoon honey
1 tablespoon lime juice
1/2 teaspoon salt
1/2 teaspoon ground cumin
Drizzle over bean mixture. Stir
until well coated. Cover and refrigerate at least 1 hour.
