Shredded Veggie and Bean Spread or Dip

Veggie Mix:
1 medium zucchini
1 medium carrot
5-7 button mushrooms
1 small onion
1 medium potato
1 small sweet potato
1 cup fat-free bean dip or fat-free refried beans

Grate/shred above veggies with a grater or salad shooter. Stir to combine. Stir in bean dip or refried beans until mixed well. Use on a cracker or as a spread for a sandwich, in a pita, or on a softshell. You can be creative and use any vegetables you have on hand such as broccoli, cauliflower, cabbage, etc.
